Anyone have any recommendations? I've got one of the Panzer Aces books, but I was wondering if there were any encyclopedia style books on the subject, with diagrams, in depth writing about particular battles, that sort of thing.

Look up the writings of Kenneth Macksey,(also under MacKsey) he has authored nearly 50 books concerning war, many of which focus, in general, or in particular, on armor.

I would recommend Panzer Tactics, german small units armor tactics in world war 2 from Wolfgang Schneider.
The book is filled with pictures and maps of battle and the tactics used.
